Spelt: A sweet, nutty cousin of common wheat.
The Amish and Mennonite communities have long prized spelt grain. It’s a tough, winter-hearty crop that produces delicious grain kernels and flour. Spelt berries can be used as a side dish as you would use rice and in soups, stews, and salads. Some folks who have trouble digesting wheat report that spelt is no problem for them. (Those with Celiac disease should not consume spelt.)
