Spelt: A sweet, nutty cousin of common wheat
The Amish and Mennonite communities have long prized spelt grain. It’s a tough, winter-hearty crop that produces delicious grain kernels and flour. Spelt flour makes excellent bread, baked goods, pasta, and crackers. Some folks who have trouble digesting wheat report that spelt is no problem for them. (Those with Celiac disease should not consume spelt.) We have two high-quality, organically grown spelts available: Sonic, a variety grown by Mervin Miller of Otsego County, and Sungold, a variety grown by John Hershberger of Madison County. Try a bit of both to see which you prefer.
