Due to its glucose content, raw honey naturally crystallizes over time. This is a good thing, as it means the honey wasn't overly heated or pasteurized, like so many store bought honeys are.
This crystallization can be controlled, however, through a process called "crystal seeding"; where a small amount of microscopic seed crystals are added to fresh, liquid raw honey. The honey is then slowly stirred in a honey creamer over a few days which interrupts the creation of large crystals, forming smaller crystals instead.
The result is a deliciously smooth, crystallized honey that is creamy and super-spreadable, yet still contains all the goodness of liquid raw honey.
