Einkorn: An ancient, flavorful, colorful, health-promoting wheat
Domesticated over 10,000 years ago, einkorn has survived to the present because of its magnificent qualities. The grain (and flour made from it) is a delicate yellow, due to its high concentration of lutein, a carotenoid whose consumption has been linked to such health benefits as reduced risk of heart disease and protection against macular degeneration and other eye diseases. It’s also delicious—rated number 1 in flavor in numerous taste tests. Try it as a whole grain flour or as berries to cook with as you would rice.
