ALL AMERICAN DRY RUB is a terrific all-around spice rub that is great to keep on hand. Use it as a seasoning mix by adding it to your ground beef for a tangy burger or use it as an all-purpose rub on venison, elk, beef, pork and it's really a big hit with our hunting customers. Customers tell us that it is magically on corn on the cob!
When using it as a rub, it is recommended to use 1 tablespoon per pound of meat. Coat the meat and then use your hands to work the spice rub into the meat -- that's why it's called a rub! Once this is done place into a resealable bag (we just use large zip lock bags) and then refrigerator for a while to let the seasonings marry with the meat.
This rub may be best on smoked venison ribs, and we like to season the ribs and then work the rub into the meat and place in the fridge to work its magic for about 8-12 hours before smoking.
For burgers, don't overwork the meat so just season the outside of the burgers and let sit for about 30 minutes before grilling.
BIRRIA Seasoning is spicy, warm, earthy, smoky and sweet, with woody depth and notes of citrus. It is the perfect blend to use for Quesabirria Tacos. It is also excellent on any slow-cooked meat; try it on brisket, ribs, or chuck roast, or use to season a whole leg of lamb. Rub onto a butterflied flank steak and roll around a stuffing of roasted chiles and pepper jack cheese; bind with butcher’s twine and grill. Stir into homemade Mexican rice. Use on Enmoladas for a Mexican “street food” treat. Blend into black bean cakes or as the seasoning in Savory Corn Fritters. Work this blend into your chili seasoning rotation. Whisk with lime juice and oil to make a dressing for Tex-Mex pasta salad. Mix into cream cheese and make stuffing for jalapeño poppers. It can be used for grilled or roasted vegetables, stirred into salad dressings, or tossed over beans. Use it wherever you’d like regular taco seasoning—with a twist.
Birria Seasoning pairs well with beef, pork, chicken, pinto and black beans, corn, peppers, and rice. Makes wonderful tacos, burritos, chili, tamales, pancakes, soups, stews, and roasted vegetables.
BUFFALO WING RUB is a Buffalo style dry rub has a nice balance of sweet from the brown sugar with some subtle nuanced heat from the chili powder, smoked paprika and habanero.
Blended from granulated sugar, garlic, sea salt, onion, paprika, mustard powder, cumin, black pepper, habanero powder, ancho powder, and guajillo powder.
For a quick dip mix 1/2 cup low fat sour cream, 1/2 cup low fat mayo, 2/3 cup of crumbled blue cheese and 1 tablespoon of white wine. Vegetables are optional.
A quick and easy buffalo wing recipe - take 2 lbs of chicken wings and cut off the wing tips. Cut the wings at the joint for two separate pieces. Use 4-6 tablespoons of wing seasoning and evenly coat both sides of all the wings. Be sure to work the mixture into the meat with your hands. Place the wings in several large zip lock bags and refrigerate for 2-4 hours (the longer you refrigerate the more the seasoning works it way all the way through the meat).
Place the wings on a broiler pan rank and cook 5-6 inches from the heat for 9-10 minutes per side or until the chicken is cooked all the way through (no longer pink). Remove the chicken wings from the oven and sprinkle a bit more seasoning on for additional flavor.
BURGER BLAST - has a delightful and full flavor that will leave you wondering what that flavor is that you can't quite put your finger (or taste buds on). The "secret ingredient" that provides this flavor is from Grains of Paradise. This African spice is more popular in Middle Eastern, North, and West African cuisines, but it has become increasingly popular in this country when used in various rubs for beef, chicken, fish, and steak.
CHIMICHURRI is an uncooked, herb-based Argentinian condiment mainly used on grilled meat. It is primarily used tableside, shared like a bowl of salsa. The combination of herbs and vinegar cut through fatty flavors of meat, bringing bright balance to an otherwise heavy dish.
Chimichurri Seasoning is a mild, family-friendly seasoning blend, so use it wherever you want a fresh burst of flavor. Make Chimichurri Sauce and drizzle it over steak, ribs, or grilled sausage. Try Grilled Steak Taco with Chimichurri Sauce or swap the steak for grilled tofu. Swap into the recipe for Herb Roasted Potatoes or sprinkle over Homemade Hummus spread on toasted flatbreads. Stir into rice and beans or make a dipping sauce for empanadas. Add to the cheese sauce when making Arepas Benedict. Add to sour cream to make a Chimichurri Dip to serve with vegetables or crackers, or blend with olive oil, red wine vinegar, and a bit of mustard to make a fresh, herbaceous salad dressing.
