Our OYSTER mushrooms are satiny, fragile mushrooms with a delicate texture and white stems. They are sweet to the taste, shrink little, and hold their shape and springiness when briefly cooked. Oyster mushrooms are chock-full of nutrients and flavor and are regarded as one of the easiest mushrooms to grow.

Other Names: Hiratake (Japanese for “flat mushroom”), Pleurotus ostreatus

Fresh KING OYSTER mushrooms have a mild almond-like flavor and chewy texture when raw and a savory flavor and creamier texture when cooked while still remaining fairly meaty. In addition, it develops a richer, more savory flavor layer. Great in salads, fettuccine and stir fries, used in place of scallops, or even turned into a vegan “bacon”.

Other Names: Hou Tou Gu in Chinese, which means "Monkey Head Mushroom". Yamabushidake in Japanese this translates to "Mountain Priest Mushroom." Wild Mushroom hunters in the west refer to Lion's Mane as Pom Pom Mushroom, Bearded Tooth Mushroom, Bear's Head or Hedgehog mushroom.

Shelf Life: Up to ten days fresh. A year or longer sliced & dried. Several months frozen.
