Pineberry Champagne Jam

This is a small batch jam made with pineberries, sugar, champagne, lemon juice and pectin. Pineberries are the the oldest known strawberry. They are somewhat rare (and expensive) in the U.S. so this jam is slightly more expensive than my usual jams. This is my first attempt at making this jam but we are growing pineberries this year so if it is popular I will make it again with Penwingle Farm pineberries. Pineberries look like a white strawberry but they are not quite as sweet as a red strawberry and they have a bit of a pineapple flavor to them. Please let me know if you enjoy it!
